Ohmic heating application in food processing: Recent achievements and perspectives

Food processing is an important operation in the food industry that converts fresh foods into final products with desirable characteristics for consumption and storage. Ohmic heating emerging technique seems to be a suitable alternative conventional heat treatment. Recently, there has been lot of research ohmic applications various foods. 
 This review highlights findings studies conducted 2018–2022 on impact physical, chemical, sensory properties foodstuffs during processing. We found this technology provides more reliable process control compared traditional technique, namely heating. Although positive effect quality foods, its efficiency limited by certain components, including acid fat, markedly affect electrochemical attributes Therefore, achieve optimal results, conditions should set accordance materials. There need further in-depth performance large, rather than lab scale.
